Pork shoulder in onion and ramson sauce
Ingredients: -1 piece of pork leg approx. 1 kg - 1 bunch of green onions - 1 bunch of wild garlic - 1/2 cup of natural white wine - 3-4 sun-dried tomatoes - 1 tablespoon of olive oil - 1 teaspoon of mustard - baby carrots - salt - black pepper
We wash the onion and wild garlic well, then chop them finely, making sure to keep the flavors intact. In the cooking appliance, we add the chopped onion and wild garlic, ensuring they are evenly distributed. Then, we introduce the sun-dried tomatoes, cut into smaller pieces, to allow them to release their aroma during cooking. A spoonful of oil will add a touch of richness and contribute to the caramelization of the ingredients.
The carefully selected meat must be washed well under a stream of cold water. Then, we pat it dry with a paper towel to remove excess water. Now, it's time to carefully place it in the ceramic pot of the cooking appliance. We then pour quality wine over the meat, allowing it to penetrate the fibers. We sprinkle salt and pepper, making sure to distribute them evenly so that every bite is full of flavor. It is important to turn the meat on all sides to ensure it is well seasoned. Finally, we leave it with the fatty side down, so the fat melts slowly and permeates the meat, providing juiciness.
We place the lid on the cooking appliance and turn it on, selecting the slow cooking function and setting the cooking time to 6 hours. This long time will allow the flavors to blend and intensify, and the meat will become extremely tender. Halfway through the program, it is recommended to turn the meat to the other side to ensure it cooks evenly and becomes delicious.
At the end of the 6 hours, the cooking appliance will automatically switch to the keep warm function. Imagine the wonderful aroma spreading throughout the kitchen! Without excessive steam or stifling heat, everything unfolds in a calm and pleasant manner. The dish is ready, and the meat has 'simmered' gently, becoming a true feast for the senses. All that’s left is to enjoy it alongside a simple side dish or a fresh salad, savoring the final result of this delicious recipe.
