Pork Tenderloin Roll with Plums

Ingredients: (2 servings) Pork tenderloin - 1 piece Plums - 4 pieces Chicken tenderloin - 2 pieces Chilli flakes - ½ teaspoon Butter - 15 g Olive oil - 1 tablespoon Rosé wine - 50 ml Quality soy sauce - 2-3 tablespoons Salt and pepper - to taste

To prepare a delicious pork tenderloin roll stuffed with chicken and plums, we start by trimming and unfolding the pork tenderloin lengthwise. This technique will not only allow us to add the stuffing but will also help with even cooking. We season the pork tenderloin with salt, pepper, and a dash of chili to give it a slightly spicy flavor that will balance the sweetness of the plums.

After seasoning the pork tenderloin, we move on to preparing the chicken tenderloin. This will be placed on top of the pork tenderloin, adding a juicy texture and delicious flavor. Just like with the pork tenderloin, we season the chicken tenderloin with salt and pepper to enhance the taste. The next step is to prepare the plums: we cut them in half, remove the pits, and place them cut-side up on top of the chicken tenderloin. The plums will add not only a sweet taste but also a pleasant moisture to the roll.

Once we have assembled the ingredients, we tie the tenderloin with string to keep all the flavors and juices inside during cooking. Now we turn our attention to the Crock Pot. In the aluminum pot of the 6-liter Crock Pot, we put a combination of butter and oil, which we heat over medium heat. Once both fats are well heated, we add the roll to give it a nice golden color. This step is essential as it helps form a crust that will retain the flavors inside.

After the roll has taken on an appetizing hue, we extinguish the heat with a splash of rosé wine, which will add a subtle flavor and help deglaze the pot, capturing all the delicious flavors. We transfer the aluminum pot to the Crock Pot and set the cooking time for 3 hours, choosing the 'low' setting. We cover it with a lid and allow the ingredients to cook slowly so that the flavors combine harmoniously.

About 15 minutes before the cooking time is up, we add the soy sauce. This will further intensify the flavors of the roll, bringing an extra umami kick. Once the time is up, we can serve the roll warm, sliced, alongside our favorite side dish. Enjoy your meal!
