Cherry Candies
Ingredients: 300 g crushed biscuits; 1 tablespoon cocoa; 200 g margarine; 10 tablespoons of milk; 1 essence of rum; 200 g sour cherries from compote or from cherry liqueur. Decoration: 2-3 tablespoons coconut flakes; 2-3 tablespoons cocoa;
In a large bowl, start by crushing the biscuits. You can use a food processor to achieve a fine texture or, if you prefer, you can break them by hand into smaller pieces. These will form the delicious base of our cake. Add the cocoa, which will not only provide an intense flavor but also add an attractive color to the mixture. After mixing the biscuits well with the cocoa, pour in the milk, which will help bind the ingredients together, giving them perfect moisture. Next, add the melted butter, which will bring an extra creaminess to the mixture, and the rum essence, which will give a special aroma.
Mix everything with a spatula or a wooden spoon until all the ingredients are perfectly homogenized and you obtain a consistent and sticky mass. Now, it’s time to form the balls. Take a portion of the mixture, large enough to roll a ball the size of a walnut in your palm. In the center of each ball, insert a sour cherry from a jar; ideally, you should use cherries from a cherry liqueur, as they add a subtle note of alcohol that enriches the final taste. Shape the ball carefully so that the cherry is completely covered by the biscuit mixture.
Once you have formed all the balls, it’s time to roll them. Choose either coconut flakes for a tropical taste and fluffy texture or cocoa powder for an elegant appearance and intense chocolate flavor. Place the balls in a container and refrigerate for at least an hour, so they harden and acquire a pleasant texture. These little delights are not only easy to prepare but also extremely versatile, being able to be served at parties, anniversaries, or simply as a delicious dessert with family.
