Coconut Bunnies
Ingredients: 500 grams of flour, 1/2 cube of fresh yeast, 280 ml of warm milk, 100 g of sugar, 100 g of butter, a pinch of salt, 1 egg yolk + 2 tablespoons of milk, a few raisins and almonds (for eyes and nose)
We begin this recipe with an essential ingredient: flour. In the middle of the flour mound, we create a generous well, a special place where the magic will begin. In this hollow, we dissolve fresh yeast along with two tablespoons of sugar and two tablespoons of lukewarm milk. This mixture will activate the yeast, and its aroma will fill the entire kitchen. After gently mixing with a spoon, we cover the well with a clean cloth and let the mixture rise for 10 minutes in a warm place, preferably near a heat source, which will allow the yeast to activate and produce air in the dough.
Once the 10 minutes have passed, we gradually add the rest of the milk, the remaining two tablespoons of sugar, room temperature butter, which will add a fine texture to the dough, and salt, essential for flavor. We knead the mixture well until we obtain a homogeneous and elastic dough. Once the dough is well kneaded, we let it rise for about 40 minutes, covered with a cloth, in a warm place, where it will grow and become fluffy.
When the rising time is over, we prepare to shape the bunnies. We sprinkle a little flour on a work surface and knead the dough again to activate it. Then we divide the dough into 16 equal portions, shaping them into balls. We flatten each ball with our hands, then, with a sharp knife, we make a cut halfway to form the long ears of the bunnies. If we notice that there is excess dough, we can carefully trim it.
We place the bunnies on a baking tray lined with parchment paper, and then cover them again with a cloth, letting them rise for another 20 minutes. Meanwhile, we preheat the oven to 180 degrees Celsius, thus preparing the ground for delicious baking.
When the bunnies are ready to go into the oven, we mix an egg yolk with two tablespoons of milk, creating a golden glaze that we apply with a brush on each bunny. For adorable details, we use raisins for eyes and almonds for their little teeth. We bake the bunnies for about 20 minutes, but it is important to check from time to time, ensuring that the bottom is browned, which will give an appetizing appearance. When they are ready, we take them out of the oven, letting them cool slightly before enjoying them. This process transforms a simple dough into a true culinary work of art, full of color and flavor, perfect for bringing smiles to the faces of loved ones.
