Pasta with Beans and Basil

 Ingredients: For 2 servings: 3 tablespoons of beans, 50 g of pasta, 1 potato, 1/2 carrot, 2 cubes the size of a walnut of celery root, 2 tablespoons of oil, a few leaves of basil (mine is giant so I only used 4, each the size of a palm), salt, 1/2 teaspoon of dried garlic.

To prepare a delicious recipe of beans with basil and pasta, the beginning is essential. So, start by soaking the beans for 6 hours, according to the instructions on the bag. This step will help rehydrate the beans and reduce cooking time. After this time has passed, rinse the beans under a stream of cold water to remove impurities and any unwanted substances.

Next, transfer the beans to a pressure cooker, add fresh water, and let it boil for 10 minutes. This quick cooking method will help the beans become soft and delicious. After 10 minutes, carefully open the pot, discard the water, and rinse the beans again. Add another amount of warm water, enough to cover them, along with a peeled potato cut into cubes, a celery cut into cubes, and a whole carrot, which will add extra flavor.

Let the mixture boil under pressure for 15-20 minutes. When the time is up, cool the pot and carefully open the lid. Check if the beans are already cooked, then you can add the pasta to the pot. Cook the pasta according to the instructions on the package, about 9 minutes, during which the flavors will blend.

Meanwhile, prepare a flavorful sauce. Tear half of the basil leaves by hand and place them in a bowl. Add the minced garlic and gradually the olive oil, mixing well to obtain a fine emulsion. When the pasta is cooked, turn off the heat and add the rest of the torn basil leaves in smaller pieces, to preserve their freshness and aroma.

When serving, use a deep plate and place a generous layer of beans with pasta. Pour the flavored oil through a sieve to avoid adding the garlic, which might overpower the delicate taste of the beans and basil. The fresh aroma of basil will perfectly complement the dish, and the oil will add a touch of refinement. This recipe is not only nutritious but also full of flavor, offering you a special meal, ideal for any occasion.
