Coconut Muffins

 Ingredients: Ingredients for 12 pieces: 200 g flour, 100 g grated coconut, 125 g sugar, 1 teaspoon baking powder, 240 ml milk, 120 ml sunflower oil, 2 eggs. Separately for decoration: 100 g melted chocolate or Nutella, 50 g grated coconut.

They are delicious, the best I have made so far. This coconut muffin recipe is perfect for any occasion, whether it's a savory breakfast, a snack between meals, or a refined dessert for friends' visits. Start by preparing all the necessary ingredients so you can enjoy the cooking process without interruptions.

In a large bowl, mix the dry ingredients: flour, which should be sifted to avoid lumps, baking powder, grated coconut, and sugar. These ingredients will form the delicious base of the muffins. Make sure to mix them well to homogenize all the flavors. In another bowl, add the wet ingredients: beaten eggs, fresh milk, and oil. These will add richness and moisture to the mixture.

After you have well mixed the wet ingredients, gradually pour them over the dry ones and gently mix with a spatula or wooden spoon. Don't worry if the batter is more liquid than you expected; the coconut will absorb some moisture during baking. Let the batter rest for about 10-15 minutes to allow the ingredients to combine perfectly.

While the batter rests, prepare the muffin molds. Whether you use silicone or metal molds, make sure to grease them with a little oil or butter so they don't stick. Fill the molds with the batter up to about 2/3 full to allow the muffins to rise beautifully during baking.

Preheat the oven to 180 degrees Celsius and bake the muffins for 25 minutes, or until they turn golden and pass the toothpick test. Once they are done, let them cool in the pan for 5 minutes, then carefully remove them onto a plate.

For an extra flavor boost, you can spread them with melted chocolate or Nutella, and then sprinkle with grated coconut. This detail will not only give them an attractive appearance but will also add a crunchy texture on top.
