Coconut and Lemon Biscuits

 Ingredients: 55 g butter, 1 cup (200 g) sugar (I used about 170 g), zest and juice of 1 lemon, 2 eggs, 1 1/2 cups (220 g) flour, 2 teaspoons baking powder, pinch of salt, 1 cup (a 200 ml glass) of finely shredded unsweetened coconut, powdered sugar.

To make these delicious cookies, we will start by preparing the necessary ingredients. It is essential to have all the ingredients at room temperature to achieve a uniform and homogeneous mixture. In a large bowl, add the softened butter along with the sugar, grated lemon zest, and eggs. Using a mixer, start at maximum speed and mix until the mixture becomes a fluffy cream and the sugar is completely dissolved. This is the perfect base for cookies, full of flavor and texture.

In another bowl, combine the flour, salt, baking powder, and coconut. These dry ingredients should be mixed well to ensure that the baking powder is evenly distributed, which will contribute to an even rise of the cookies during baking. Once the dry mixture is homogenized, gradually add it over the fluffy cream. Using a spatula, gently mix, being careful not to lose the air incorporated into the mixture.

Once the ingredients are well mixed, add the lemon juice, which will not only enhance the flavor but also provide a note of freshness to the cookies. After obtaining a homogeneous dough, cover the bowl with plastic wrap and let it sit in the freezer for about 20-30 minutes or in the refrigerator for an hour. This step is crucial as it will make the dough easier to handle.

Meanwhile, prepare a plate with powdered sugar, which will be used to roll the dough balls. After the dough has chilled sufficiently, take it out and, using a teaspoon, take small portions of dough, which you will shape into balls the size of a walnut. Roll each ball in the powdered sugar, ensuring it is evenly coated, then place them on a baking sheet lined with parchment paper.

Bake the cookies in a preheated oven at 150°C (300°F) for 15-20 minutes or until the edges become slightly golden. It is important not to overbake them, as we want to maintain a soft texture inside, in contrast to the crispy edge. From the mentioned amount of ingredients, you will get about 35 cookies, but the final number may vary depending on the size of the formed balls. These coconut and lemon cookies are ideal to be served alongside a cup of tea or coffee, bringing a touch of indulgence to every bite.
