Yogurt Cake

 Ingredients: For the base: - 1 yogurt of 125 g (you can use natural yogurt or fruit yogurt - I used strawberry yogurt). The plastic container of the yogurt is considered a measure for the ingredients needed for this dessert. - 1 measure of sunflower oil - 2 measures of granulated sugar - 3 measures of freshly sifted white flour - 2 teaspoons of baking powder - 3 eggs For the glaze: - 50 g of butter - 100 g of cocoa - a pinch of salt - 80 ml of milk - one and a half teaspoons of vanilla essence - 350 g of freshly sifted powdered sugar

To prepare a delicious cake base, we start by sifting the flour, an essential step to achieve a fluffy texture. In a bowl, combine the flour with the baking powder, ensuring the ingredients mix evenly. Now, it's time to preheat the oven to 180 degrees Celsius, so it's ready to receive our delight.

In another bowl, begin mixing the yogurt, oil, and sugar on low speed. This combination will give moisture and a pleasant taste to the cake. As the mixture becomes homogeneous, add the eggs one at a time. Make sure each egg is well incorporated before adding the next. This step will help aerate the mixture, making the base fluffier.

Once you have a well-bound mixture, start adding the flour gradually. Continuous mixing will ensure that the ingredients combine perfectly without forming lumps. Once you achieve a homogeneous mixture, line a baking tray with parchment paper, making sure it is well secured, so the mixture can bake evenly.

Pour the mixture into the tray and place it in the preheated oven. Bake for 40-45 minutes, but don't forget to check the base after 35 minutes using a toothpick: if it comes out clean, the cake is ready. Once baked, let the cake cool on a rack so that air can circulate and it doesn't become soggy.

If you want to add a glaze, now is the time to prepare it. In a small pot, dissolve the powdered sugar and cocoa in 80 ml of water over low heat, continuously stirring with a wooden spoon to avoid lumps. Once the mixture is homogeneous, turn off the heat and add the salt, vanilla essence, and milk, mixing gently.

To give the glaze a perfect consistency, melt the butter in another pot over low heat. Then, add the cocoa mixture over the melted butter, stirring continuously until you achieve a creamy texture. If necessary, you can add 1-2 tablespoons of milk to get the desired consistency. Once the glaze is ready, pour it evenly over the cooled cake, ensuring it is completely covered. This rich glaze will transform the cake into an irresistible dessert, perfect for any occasion. Cut into portions as desired and enjoy the treat made with so much love!
