Caramelized Salmon with Cabbage or Pineapple Garnish

 Ingredients: 6 slices of bacon, 1/2 red onion, 1/2 head of raw green cabbage, 1 tablespoon of water, 4 pieces of fish (fillet), 1 teaspoon of olive oil, 20 g butter, a pinch of brown sugar (optional), pineapple (optional), salt and pepper to taste, lemon juice, lemon or parsley for decoration.

We start our delicious recipe with a selection of fresh and aromatic ingredients that will transform a simple meal into a true culinary experience. The first step is to prepare the bacon slices, which we will cut into small pieces. These will be fried in a pan, where the fat will provide an unmistakable aroma and a savory taste to our dish. Make sure the pan is well heated so that the bacon becomes crispy and releases all its juices.

In the meantime, we turn our attention to our vegetables. We peel the red onion, cutting it into fine cubes, and take care of the cabbage, which we cut into thin strips. After the bacon has been fried and turned golden, we add the red onion to the pan, letting them sauté together to absorb the delicious flavors. After a few minutes, we add the chopped cabbage, a tablespoon of water, salt, and pepper, mixing all the ingredients well. We let the mixture cook, stirring occasionally, until the cabbage becomes soft and starts to take on a pleasant texture. This process should not take more than five minutes, especially if you are using pre-cut, fresh cabbage.

Once the cabbage is ready, we take the pan off the heat and keep it warm as we now focus on the salmon. We wash the previously used pan well and add the butter and oil. If you wish, you can also add a teaspoon of brown sugar, which will help caramelize the fish. In the meantime, we season the salmon fillets with salt, pepper, and a few drops of lemon juice to add a touch of freshness. We heat the oil and, when ready, place the salmon in the pan. We fry each piece for about two minutes on each side, adjusting the time based on the thickness of the fillet. If you prefer a more intense flavor, you can add a splash of soy sauce, although it is optional.

For plating, you have the option to serve the salmon on a bed of cabbage with bacon or alongside fresh pineapple, which will add a sweet and exotic touch to the dish. Carefully place the salmon fillet on the plate, alongside the cabbage and bacon garnish, or next to the slices of pineapple.
