Oven-baked trout with green pepper

To prepare a special delicacy, we start with the preparation of the trout, which will become the stars of the meal. The first step is to rub them with salt, ensuring that each fillet is well coated. We let the fish absorb the salt flavor for 30 minutes, which will help enhance the taste.
Meanwhile, we can take care of preparing the sauce that will accompany the trout. In a bowl, we crush the green peppercorns, letting their spicy aroma release. We add melted butter, which will provide a creamy texture and rich flavor, then squeeze the juice of a fresh lemon, which will bring an extra touch of acidity and freshness. Finally, we complete the mixture with oil, mixing well until all the ingredients homogenize into a delicious sauce.
Preparing the tray is an essential step. We pour the obtained sauce into the tray and gently move it so that it spreads evenly on the bottom. Then, we take the trout, coat them in flour, ensuring they are well covered, and then pass them through the sauce in the tray. This technique will help create a delicious crust during baking. For a splash of color and flavor, we sprinkle a little paprika on top.
To prevent the fish from drying out, we add 50 ml of water to the tray, which will generate steam during baking. We preheat the oven to 190°C and place the tray with the trout inside, letting them bake for 20 minutes. It is important to baste them with the sauce from the tray at least four times to keep them juicy and flavorful.
After 20 minutes, we increase the oven temperature to 240°C and let the trout bake for another 10 minutes until they become golden and crispy on the outside. In the meantime, we can prepare the side dish. Boiled potatoes are the perfect choice as they are easy to prepare. We boil the potatoes in salted water, then peel and cut them into cubes.
For the garlic sauce, we crush 2 cloves of garlic with salt, adding a bunch of freshly chopped parsley, which will bring a note of freshness. We mix everything with 200 g of sour cream, obtaining a creamy side dish, perfect to accompany the fish.
Finally, we serve the hot trout alongside the boiled potatoes and garlic sauce with sour cream, enjoying a delicious dish that will impress everyone who tastes it. This recipe is not just a meal, but a memorable culinary experience.
