Mushroom Purée (Vegan)

 Ingredients: 1 kg potatoes, 300 g champignon mushrooms, 150 ml oil, 3 cloves of garlic, salt and pepper to taste, dill and basil to taste.

To create a flavorful and savory mushroom mashed potato, we will start by preparing the necessary ingredients. In the first stage, the potatoes need to be peeled carefully, ensuring that we remove all impurities and green parts. After peeling, we cut them into uniform cubes so that they cook evenly. These are placed in a pot with water and a little salt, over low heat, to prevent rapid boiling. It is important not to forget to take care of the mushrooms in the meantime.

The mushrooms, preferably champignon or pleurotus, are gently washed under a stream of cold water, then dried with a paper towel. They are cut into larger pieces, ideally the caps in four, to maintain their texture and flavor during cooking. In a pan, 50 ml of oil is heated, and when it is well heated, the mushrooms are added. They are sautéed over medium heat, stirring occasionally, until they turn golden and their delicious aroma begins to fill the kitchen.

Once the potatoes are boiled, we take them out of the water and mash them with a metal potato masher, being careful to leave a small amount of boiling water in case the mash turns out too thick. This water will help achieve a creamy and pleasant consistency. The mushrooms, which are now browned, are added to the mashed potatoes, along with the oil in which they were sautéed, to enhance the flavor.

To add an extra layer of flavor, we crush a few cloves of garlic and add them to the mash mixture. Then, incorporate some finely chopped fresh basil leaves and dill, bringing a touch of freshness to the dish. It is time to adjust the texture of the mash by gradually adding the remaining oil. Finally, do not forget to season to taste with salt, pepper, and vegeta, to achieve a savory mash that will delight the taste buds.

Serve this mushroom mashed potato alongside a juicy steak or as a side dish to a fresh salad. This dish is not only a delicious option but also an excellent way to bring authentic flavors and healthy ingredients to the plate. Enjoy every bite!
