Chocolate Orange Truffles

 Ingredients: Approximately 18-20 truffles, 70 ml of heavy cream (not vegetable or with sweeteners) or cream with a fat content of 30%; it is important to adhere to these requirements. 3 tablespoons of honey, 120 g of dark chocolate pieces between 70-80% (without lecithin or vegetable fats), 1 tablespoon of vanilla extract, 30 g of unsalted butter (82%) at room temperature, 3 tablespoons of freshly squeezed orange juice (45 ml), a small pinch of grated organic orange zest.

To make some delicious and refined truffles, start by combining the cream, honey, and vanilla extract in a medium-sized saucepan. Place the saucepan over low heat and bring the mixture to a very slow boil, being careful not to let it boil vigorously to avoid burning the cream. When the mixture starts to simmer gently, remove the saucepan from the heat and let it cool slightly.

In a heatproof bowl, add the finely chopped chocolate. Carefully pour the hot cream over the chocolate. Using a spatula, gently stir until the chocolate is completely melted and incorporated into the cream, resulting in a smooth and homogeneous texture. Once the chocolate is well combined with the cream, add the diced butter, orange juice, and zest. Mix again, ensuring that all the ingredients are well integrated. This step will add a fresh and aromatic flavor to your truffles.

After the mixture has homogenized, let it cool completely at room temperature, and then you can refrigerate it for about 1-2 hours so that it becomes firmer and easier to shape. You will obtain a dense and fine chocolate paste, perfect for forming the truffles. If you want to coat them with cocoa, coconut, or ground pistachios, it is recommended to place these ingredients in the freezer for 10 minutes before you start shaping the truffles to achieve a better texture.

Prepare a tray lined with parchment paper so that the truffles do not stick. Using a spoon or a small ice cream scoop, take some of the chocolate paste and form balls between your palms, making sure to give them a uniform shape. After you have formed the balls, roll them in cold cocoa, room temperature chocolate coating, or other preferred ingredients, depending on your tastes. Place the truffles on the prepared tray and, if you chose to coat them with chocolate, let them cool until the chocolate is completely set. Your truffles are now ready to be enjoyed, either as an elegant dessert or as a little treat during moments of relaxation.
