Fake Ice Cream
Ingredients: Ingredients for the "ice cream": -100g pumpkin -70 g peas -3 potatoes -salt -pound butter -2 tablespoons milk -1 tablespoon grated cheese Ingredients for the biscuits: -1 tablespoon cooked pumpkin -1 or 2 tablespoons cooked potatoes -1 egg -salt -flour as much as you need -pound butter -1 teaspoon baking powder -2 tablespoons milk -dried chives -rosemary
To create a delicious and healthy dish, we start by preparing the main ingredients: potatoes and pumpkin. Choose medium-sized, starchy potatoes to achieve a smooth puree, and a healthy pumpkin that is sweet and aromatic. After selecting them, peel the potatoes and pumpkin with a sharp knife, then wash them under a stream of cold water to remove impurities. Cut the potatoes and pumpkin into evenly sized cubes to ensure even cooking.
Boil each ingredient separately, the potatoes and pumpkin, in water with a little salt to enhance the flavors. Let them boil until soft, then drain well and mash them with a potato masher or blender until you achieve two smooth purees. From the pumpkin puree, take a spoonful and mix it with 1 or 2 tablespoons of potato puree. Add a piece of butter, 2 tablespoons of milk, salt, a teaspoon of baking powder, dried thyme, and finely chopped rosemary. Mix well until the composition is homogeneous.
Now, move on to the next step: gradually add the flour, stirring continuously, until you obtain a non-sticky dough. This will be the base for the delicious cookies. Roll out the dough on a floured work surface using a rolling pin to a thickness of about 1 cm. Using a cookie cutter, make cookies of various shapes. If you wish, you can also cut sticks from the dough. Place the cookies on a baking tray and put them in the preheated oven, allowing them to bake until golden and crispy.
Meanwhile, prepare the potato puree. Mix it with a little butter, a tablespoon of grated cheese, and a little milk, then place it in the blender cup and blend gently. Set it aside. Next, repeat the process with the pumpkin puree, adding a tablespoon of potato puree to enrich the flavor. Blending will create a fine and creamy texture.
Now, it's time to boil the peas with a little salt. Once boiled, place them in the blender and blend until you achieve a uniform puree. Don't forget to keep the water in which the peas were boiled, as it will be used to thin the puree, ensuring an ideal consistency.
Once the pea puree has the right texture, pass it through a sieve to obtain a fine consistency. Then, we begin assembling. Using an ice cream scoop, take some potato puree and place it in a cup, then add a layer of pea puree. Repeat this process until the cup is full, making sure to finish with a layer of pea puree.
As a topping, add the pea puree and, for an attractive appearance, sprinkle some cookies made from pumpkin and potatoes on top. This dish can be served immediately, being not only tasty but also visually appealing. Enjoy your meal!
