The dough is the perfect base for a delicious recipe of cheese-filled pastries, and the preparation process will turn each step into a true culinary art. Start by preparing the dough: combine the egg, sour cream, and sifted flour together with salt, mixing them well until you obtain a homogeneous dough. It is important for the dough to be slightly softer and stickier than bread dough, to achieve tender and tasty pastries. After completing this step, let the dough rest for 15 minutes at room temperature. This will allow the gluten to relax and make it easier to handle.

After resting, divide the dough into three equal parts. Each part will become a delicious sheet, so roll them out into rectangular shapes using a rolling pin. Make sure each sheet is uniform. Brush each sheet with one-third of the soft butter, making sure to cover the entire surface. Then, roll each sheet into a tight roll and wrap them in plastic wrap. Place the rolls in the fridge for at least 30 minutes, so the butter hardens and contributes to the final texture.

Meanwhile, proceed to prepare the filling. Mix the cottage cheese with the egg, salt, dill, and green onion, ensuring that all ingredients are well combined. This fresh and aromatic filling will give the pastries an unmistakable taste. Once the filling is ready, take a roll from the fridge and cut it into 10-12 equal pieces. Each piece should be rolled out into a round sheet with a diameter of 6-8 cm. In the center of each sheet, add 1-2 teaspoons of the delicious filling prepared earlier.

Brush them with sour cream to add extra flavor and a golden texture during baking. Repeat this process until you finish all the dough and filling.

Preheat the oven to 200 degrees Celsius and bake the pastries until they turn golden, then reduce the temperature to 150 degrees and continue baking for another 10 minutes. Once the pastries are ready, take them out of the tray and place them on a rack. Immediately cover them with a towel to soften, which will make the exterior soft and pleasant to taste.
