Small squids in tomato sauce with potatoes
Ingredients: for 2 servings: 6 small cuttlefish (they were ready cleaned) 3 medium potatoes 1 glass of white wine tomato juice onion oil ( I don't ... ) salt, pepper parsley and basil .... or only parsley ... as you like
To prepare a delicious dish with cuttlefish, we start by marinating the ingredients. In a generous bowl, we place the cleaned and chopped cuttlefish, then pour in a glass of wine vinegar, adding cold water until the cuttlefish is completely covered. For an extra flavor, we add a small hot pepper, which will provide a spicy and pleasant taste, and a pinch of spices – the secret of 'sot Roxana' – which will transform the dish into a true feast. We cover the bowl with a lid and let the cuttlefish marinate in the refrigerator for an hour, so the flavors blend perfectly.
After the marinating time has passed, we prepare to continue cooking. In a heated pan, we pour in the oil and wait for it to heat well. We add the marinated cuttlefish, letting them sauté for about a minute. If you prefer, you can also add onion, but in my recipe, I decided to omit it. After the cuttlefish has taken on a slight color, we carefully pour in a spoonful of the marinade, which will add an intense flavor and help tenderize the meat. We let it simmer for a few moments until the liquid partially evaporates.
Next, we take care of the potatoes. We cut them into suitable cubes – I chose to make them a bit larger, but after a few minutes, I realized it would have been better to chop them smaller. So, we add them to the pan along with the tomato juice, which will give the dish a sweet and sour note, and a splash of water to prevent sticking. We mix everything well and let it simmer on low heat, covering the pan with a lid.
After a while, we will check if the potatoes are cooked. When they are soft and absorbed by the flavors of the cuttlefish and tomatoes, the dish is ready. We can serve it warm, alongside a fresh salad or crispy bread. This simple yet flavorful recipe will turn an often overlooked ingredient into a special dish, full of taste and color, perfect for impressing family and friends. Enjoy your meal!
