Basboosa

Ingredients: * 500 g semolina * 3 tablespoons melted butter (you can melt the butter in the microwave) and butter for greasing the baking dish * 300 g sugar * 250 g yogurt * 50 g peeled and crushed almonds * 8 whole almonds * 1/2 teaspoon dry yeast For the lemon syrup: * 100 ml water * juice of one large lemon * 100 g sugar (I used brown sugar)

To prepare a delicious basboosa, a fragrant and soft dessert, we need a few simple yet essential ingredients. We start by mixing natural yogurt with sugar in a generous bowl, using a mixer to achieve a homogeneous composition. It is important to ensure that the sugar dissolves completely in the yogurt, so the dessert has a uniform texture. Once we have this creamy base, we gradually add the semolina, dividing this process into 3-4 stages, continuing to mix until everything is well incorporated.

After the semolina is added, we pour in the melted butter, which will add a rich flavor and a fluffy texture. Next comes the baking powder, which will help the dessert rise, giving it an airy consistency. We mix again with the mixer until the composition becomes homogeneous and fluffy. Now, it is time to add the crushed almonds, which will not only enrich the taste but also add a wonderful crunchy note.

Once the mixture is ready, we transfer it to a heat-resistant dish, which we have previously greased with butter to prevent sticking. Using a plastic spatula, we portion the composition, obtaining about 8 servings. It is important to let the preparation rest at room temperature for 4 hours; I covered the dish with a towel to maintain moisture. This step will help optimize the final texture of the dessert.

Meanwhile, we heat the oven to 180 degrees Celsius. After the 4 hours of resting, we place the dish in the oven, baking for about 30 minutes, during which the dessert will rise and acquire a beautiful color. Once the baking time is up, we take the tray out of the oven and, using a knife, cut the composition again along the initial cuts. We carefully place an almond on each portion for an attractive look.

We return the dish to the oven to allow the almonds to become golden and crunchy. Once the basboosa has obtained a remarkable crust, we take it out and let it cool completely. To serve it, we prepare a delicious lemon syrup: we start by heating water and dissolving sugar in it, simmering the mixture over low heat for about 3 minutes until it becomes slightly viscous. After this, we add the lemon juice and take the pot off the heat, letting the syrup cool.

Finally, we pour the lemon syrup over the cooled cake just before serving, adding a note of freshness that will perfectly complement the rich flavor of the dessert. Enjoy basboosa with your loved ones and savor every bite!
