Cake in Three Colors

 Ingredients: Dough: 6 eggs, 6 tablespoons sugar, 6 tablespoons flour, a pinch of salt, vanilla and lemon zest, 6 tablespoons flour, 3 tablespoons oil, cocoa. Whipped cream: 400 g liquid cream, 4 tablespoons milk, 4 tablespoons honey, 10 g gelatin.

To create a delicious and refined cake, we start by separating the egg whites from the yolks. It is essential to ensure that the bowl in which we will beat the egg whites is clean and dry, to achieve a perfect foam. We add a pinch of salt over the egg whites and begin to beat them with a mixer at medium speed until they become foamy. Then, we gradually add 3 tablespoons of sugar from the 6, continuing to mix until we achieve a firm and glossy foam.

In another bowl, we will prepare the yolk mixture. We mix the yolks with the remaining sugar until they become a frothy, intense yellow, and the mixture becomes homogeneous and aerated. This step is crucial to ensure a fluffy cake. Once we have obtained the yolk foam, we add this mixture over the beaten egg whites, being careful to gently fold it in with a spatula, from top to bottom, so as not to lose the air in the mixture.

The next step is to incorporate the flour, mixing again with gentle movements to maintain the airy texture. Finally, we add the oil, which will provide the cake with a pleasant moisture. We divide the mixture into two equal parts. In one half, we add cocoa, mixing again carefully.

We bake each layer on a rectangular tray lined with parchment paper at a moderate temperature until the layers turn golden and pass the toothpick test. While the layers cool, we prepare the whipped cream. Beat the cream until it becomes firm, then hydrate the gelatin in a little cold water. After about 10 minutes, dissolve the gelatin either in the microwave or over a double boiler, being careful not to let it boil.

In the whipped cream, we add honey, milk, the dissolved gelatin, and vanilla essence. We gently mix until homogeneous. The cake assembly is done in layers: we start with a white layer, followed by the whipped cream, then the cocoa layer, and on top, we apply another layer of cream. For an extra flavor and moisture, we drizzle the layers with a little compote juice, which will add a fruity note and make the cake fluffier. Finally, we decorate with grated chocolate, which will add an elegant appearance and an intense taste. We let the cake cool before cutting and enjoying it. This recipe is perfect for any occasion, bringing a touch of sweetness into our lives.
