Semolina pudding

 Ingredients: -1 liter of milk - 1 cup of semolina - 9-10 tablespoons of sugar - 2 eggs - 50 g of butter - 1 lemon

To prepare a delicious semolina pudding, start by bringing a liter of fresh milk to a boil. Gradually add 6 tablespoons of sugar, stirring constantly to ensure it dissolves completely. The aroma of lemon zest will give a refined taste to your pudding, so don't forget to add a few strips of well-washed lemon peel. Let the milk boil until it reaches the boiling point, and then, with a steady hand, add the semolina in a rain-like fashion. It is essential to stir continuously to avoid the formation of lumps and ensure the semolina integrates evenly into the milk.

After the semolina has swollen and absorbed the milk, remove the pot from the heat and let the mixture cool slightly. At this point, add the diced butter, the yolks from 3 eggs, and to give a fluffy texture, incorporate the beaten egg whites. Gently mix with up-and-down movements to keep the air in the egg whites and achieve a fluffier pudding.

Separately, prepare a small pot that you will use to bake the pudding. Sprinkle the remaining sugar on the bottom of the pot, allowing it to caramelize over low heat until it becomes golden and shiny. Make sure the sugar evenly covers the bottom of the pot, as this caramel will add a special taste and a beautiful color to the pudding.

After the sugar has cooled and formed a caramelized base, carefully pour in the semolina mixture. Preheat the oven to 180 degrees or prepare a larger pot with boiling water on the stove. Place the pot with the pudding in this larger pot, ensuring that the water reaches halfway up the pot, to create a steam bath effect that will help cook the pudding evenly. Let the pudding bake for about 40-50 minutes, or until it is golden brown and firm to the touch.

When ready, carefully remove the pot from the water and let the pudding cool slightly before turning it out onto a plate. This semolina pudding, with its fine texture and lemon aroma, will surely be a dessert that will impress anyone. Serve it with a fruit sauce or a spoonful of sour cream for an extra burst of flavor. Bon appétit!
