Orange Juice Syrup

 Ingredients: - juice from 4 (5-6) large oranges - juice from 1 lemon - 650 g sugar - grated peel of 1 orange, optional

To create a delicious orange syrup, start by squeezing the juice from 4 large oranges and 1 lemon using a manual juicer. This method will not only extract the juice but will also leave small bits of pulp, which will enrich the syrup's flavor. It is important to measure the liquid obtained, ensuring you have 700 ml. If you have a smaller volume, do not hesitate to squeeze another 1-2 oranges to reach the necessary amount.

Once you have the juice ready, put it in a pot together with the sugar, then place the pot over low heat. Let the mixture simmer gently for 2 hours. It is essential to stir continuously at the beginning to ensure that the sugar dissolves completely. After about an hour of boiling, you will need to skim off the foam that forms on the surface. This step is not only to improve the appearance of the syrup but also to enhance its purity.

As time passes, you will notice that the syrup begins to take on a caramelized hue, adding remarkable depth of flavor. After 1 hour and 30 minutes of boiling, it is time to strain the syrup through a fine sieve to remove any impurities. Then, put the syrup back on low heat and continue to boil it. At this stage, the syrup may still seem thin, but it will become increasingly sticky and smooth as it boils.

After 15 minutes, you can add the grated orange peel, an optional ingredient that will give the syrup an even more intense flavor. Continue to boil the mixture until the 2 hours are up, being careful not to let it burn. When the syrup reaches the desired consistency, it is time to transfer it into sterilized and warm jars. Make sure the jars are well prepared to maintain the quality of the syrup.

After pouring the syrup, seal the jars and turn them upside down. This trick will help create a vacuum, keeping the syrup fresh for a longer period. Let the jars cool completely between blankets, which will help preserve the flavors. Once they have cooled, do not forget to label them with the date and contents, then store them in the pantry. This orange syrup will become a versatile ingredient in your kitchen, perfect for sweetening various dishes or adding a citrus note to drinks.
