To prepare the famous chicken schnitzels, the first step is to choose high-quality chicken breasts. Select fresh meat with no visible fat to achieve a juicy and tasty final result. After selecting the breasts, start by washing them well under a stream of cold water, then dry them with a paper towel.

Cut the breasts into the desired slices, being careful not to make them too thick to ensure even frying. Each slice will need to be beaten with a schnitzel mallet to make them thinner and help them cook faster. Make sure to use plastic wrap or a piece of parchment paper between the mallet and the meat to avoid damaging it.

Once the chicken slices are beaten, generously salt both sides so that the flavors penetrate well into the meat. Then, prepare three separate bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Once the slices are salted, pass each piece through the flour, ensuring they are evenly coated. Then, dip them in the beaten eggs, letting the excess drip off. The final step is to roll them in breadcrumbs, making sure each piece is evenly coated for a crispy crust.

After all the slices are prepared, place them on a tray lined with wax paper, separating them to prevent sticking. This is an important step as it will facilitate freezing later. Once you have finished preparing all the slices, place the tray in the freezer. After a few hours, when the schnitzels are completely frozen, transfer them to plastic bags, being careful not to put too many in each bag, just enough for one frying session.

When you decide to cook them, do not thaw them. Simply take the desired portion out of the freezer and place them directly into the hot oil. This will help keep the juices inside and ensure a crispy crust on the outside. If you have a little extra time, you can let them thaw for about 30 minutes, but no longer, to avoid affecting the texture. Fry them until golden and crispy, then place them on a paper towel to absorb the excess oil. These schnitzels are perfect to be served with a side of fresh salad or mashed potatoes, bringing joy to every meal.
