Cherries in the Freezer

To prepare frozen cherries that retain the flavor and aroma of summer, start by selecting ripe, healthy cherries with no signs of damage. It is essential that the fruit is of high quality, as this will influence the final taste of your preparations. Wash the cherries with cold water, taking care to remove any impurities or residues. Once the cherries are clean, proceed to remove the pits. This step can be done using a special pitting device or a small knife, being careful not to damage the fruit.
After you have carefully removed the pits, let the cherries drain well. This is an important step, as excess water can cause ice crystals during freezing, affecting the texture of the fruit. Once the cherries are well-drained, place them in a single layer on trays to prevent them from sticking together during freezing. It is recommended to use clean, dry stainless steel or plastic trays.
After you have arranged the cherries, place the trays in the freezer. Let them freeze for a few hours, but ideally, you should leave them for five to 24 hours. This technique, known as flash freezing, will help the cherries retain their shape and juiciness. Once the cherries are well-frozen, remove the trays from the freezer and transfer the frozen cherries into containers with lids. Be sure to leave a little space in each container to allow for expansion during freezing.
To easily identify the contents, it is helpful to label each container with the freezing date and the type of fruit. This way, you can better organize your supplies. Then store the containers in the freezer, where the cherries can be kept for 6 to 12 months. This is a great way to have delicious cherries on hand, ideal for smoothies, cakes, or sauces, even during winter.
