Step by step for a perfect soup:

1. Preparing the ribs: Start by cutting the smoked ribs into smaller pieces, about 5-7 cm. They will cook evenly and easily detach from the bone. Place the meat pieces in a large pot along with 2 liters of cold water.

2. Boiling the ribs: Place the pot on medium heat and allow it to reach boiling point. At this moment, foam will start to form on the surface. Use a skimmer to remove this foam, so you will get a clearer and more appetizing soup.

3. Cooking the meat: Once you have cleaned the foam, reduce the heat and let the ribs simmer on low heat for about 1 hour. If you use a pressure cooker, the cooking time will significantly reduce to about 30-40 minutes.

4. Adding the vegetables: After the meat is cooked about 75%, it’s time to add the vegetables. Dice the carrots, parsley root, and parsnip into small cubes, and you can leave the onion whole or chop it. Add all these vegetables to the pot, along with salt to taste. This will enhance the soup's flavor and allow the vegetables to soak up the smoky taste of the meat.

5. Final boiling: Let the soup simmer for 30-40 minutes until the vegetables are soft and the meat is tender. At this stage, you can add diced tomatoes, either fresh or canned, to provide a pleasant acidity to the dish.

6. Adding the borscht: When the vegetables are fully cooked, add the fresh borscht. Let the soup boil for another 5-10 minutes to allow the flavors to combine. If you like, you can also add a bit of noodles for a richer consistency.

7. Tempering the soup: In a separate bowl, beat the two eggs with a fork. When the soup is ready, take a ladle of hot broth and gradually add it to the bowl with the eggs, stirring continuously to prevent coagulation. Then, pour the mixture into the pot, stirring well.
