Homemade Puff Pastry
To prepare a delicious buttery flaky dough recipe, start by rubbing the butter well with the flour, mixing them until you achieve a fluffy cream. This step is essential as it will give the dough a fine texture and a rich taste. Once the cream is ready, divide it into four equal parts and set it aside for later use.
Now, let's move on to preparing the dough. In a large bowl, combine the flour, egg yolks, sparkling water, yogurt, and salt. Mix the ingredients until you obtain a smooth and elastic dough. You may need to add 1-2 tablespoons of flour depending on the moisture of the ingredients used. After you have obtained the dough, transfer it to a lightly oiled work surface and divide it into two equal parts.
Take one part of the dough and roll it out into a square sheet. Evenly spread ¼ of the fluffy butter cream you prepared earlier over the surface. Then, mentally divide the square into three sections on each side and make two cuts, leaving the center uncut. This way, you will obtain nine squares of dough that will remain connected in the center of the square.
Folding the squares is an important step. Start by folding the corners of the squares towards the center, making sure to follow the rule of covering one square with the opposite one each time. After folding the corners, continue with the squares on the middle of the sides, always covering a folded square with its opposite. In the end, you should get a compact square shape of dough with all corners covered.
Turn the square of dough onto a plastic wrap, with the top side down, and wrap it well. Place it on a cutting board or flat surface and refrigerate for 15 minutes to cool and hold its shape. After this time, remove the wrap and place the square on the oiled work surface, turning it again with the bottom side up. Brush the surface with a little oil and roll it out again into a square sheet. Repeat the oiling process with ¼ of the butter cream, make the cuts as before, fold the dough identically, and turn it again. Wrap it up, place it on a flat surface, and leave it in the fridge for 30 minutes.
After cooling, take the dough out onto the oiled work surface and roll it out into a sheet the size of the baking tray. Transfer it to the tray lined with parchment paper and prick it here and there with a fork to prevent air bubbles from forming during baking. Repeat this for the other part of the dough as well. Use the dough sheets as you prefer, adding filling between them if desired. In this case, cut the top sheet into pieces of the desired size, brush it with egg, and bake in a preheated oven at 200 degrees for about 40-50 minutes, at 180 degrees, or until the dough is risen, baked, flaked, and beautifully golden brown.
