Mujdeiul is a Romanian delicacy, full of flavors and tradition, that finds its place both at festive tables and in everyday life. It starts by cleaning the garlic, making sure to choose fresh cloves, as their aroma will considerably influence the final taste of the mujdei. Take a mortar and place the garlic cloves in it. Sprinkle a little sea salt, which will not only enhance the flavor but also help create a fine paste. Use circular and pressing motions to turn the garlic into a creamy paste. This process requires a little patience, but you will notice how the garlic becomes increasingly homogeneous, releasing its aromas.
Once you have a fine paste, gradually add the olive oil while continuing to rub the mixture. It is essential to add the oil in small amounts to allow for proper emulsification. Vigorous rubbing will help integrate the oil into the paste, resulting in a creamy and rich mujdei. Once you have incorporated all the oil, you can add the lemon juice, which will provide a refreshing contrast and balance the flavors. It is optional but recommended, as the acidity of the lemon will add a note of freshness.
After obtaining a fine mujdei base, it's time to add the sour cream or yogurt. Choose a thick, fermented sour cream that will make the mujdei creamier and richer. Mix well, ensuring all ingredients are homogenized. Then add the diced tomato, which will add a splash of color and sweetness. Finally, finely chop your favorite herbs, whether dill, parsley, or coriander, and incorporate them into the mixture. This will bring an extra freshness and unmistakable aroma.
