Apple Sorbet

 Ingredients: 4-5 golden apples, 4 heaping tablespoons of sugar, 300 ml of water

To make a delicious and fragrant dessert, we start by preparing the apples. First, we wash the apples thoroughly under a stream of cold water to remove any impurities or pesticides. After cleaning them, we cut them into quarters and carefully remove the seed core. Each quarter of the apple is then cut into smaller pieces, about 2-3 cm, to allow for even and quick boiling.

We place these apple pieces in a large pot and add sugar and water. The amount of sugar can vary depending on the sweetness of the apples, but a standard measure would be about 100-150 g of sugar for 1 kg of apples. The water helps create a light syrup that will enhance the flavor of the mixture. We put the pot on medium heat and let the apples boil for 5-10 minutes. It is important to keep an eye on them and ensure they become soft enough to be easily pierced with a fork, but without letting them turn into a paste, as the flavor of the apples will be lost.

Once boiled, we let the mixture cool down as much as possible to avoid burning ourselves while blending. Once the apples have cooled, we transfer them to a blender or food processor, along with the remaining liquid from the pot. We blend everything until we obtain a fine puree, being careful to retain the apple skin, which adds extra flavor and nutrients. This step is essential for achieving a creamy texture and intense flavor.

The resulting puree is then poured into a plastic container with a lid or another airtight packaging. It is important to leave a little space in the container, as the mixture will expand during freezing. We place the container in the freezer and let it cool completely. After an hour or two, when the puree has started to freeze but is not completely solid, we take it out of the freezer and blend it again. This step will help achieve an airy and fluffy texture, similar to that of a delicate cream.

Once we have the fluffy cream, we can serve it immediately or keep it in the freezer to enjoy later. This dessert is ideal for hot summer days, having a fresh and refreshing flavor. It can be served plain, but also accompanied by a dollop of whipped cream or alongside a crunchy biscuit. Regardless of how you choose to enjoy it, this apple dessert will surely bring a smile to your face!
