Sicilian Pesto
Ingredients: -400g tomatoes -45 basil leaves -1 garlic clove -10 almonds -5 tablespoons of cheese -4 or 5 tablespoons of fresh ricotta -100ml olive oil -salt
Tomatoes are the main ingredient of this savory recipe, which combines the freshness of vegetables with the intense flavors of herbs and cheeses. Start by weighing 600 grams of ripe tomatoes, preferably Roma or cherry type, as they have a more concentrated taste. After weighing them, wash them well under a stream of cold water to remove any impurities. Once they are clean, cut each tomato in half lengthwise. Using a small spoon, remove the seeds and soft pulp from the inside, leaving only the meaty walls of the tomato. These cleaned halves will be cut again in half, so you get quarters of tomatoes, which you will add to a large bowl.
Next, prepare 15 fresh basil leaves, which will add a fragrant and fresh note to the dish. Wash them under water, then dry them with a kitchen towel, being careful not to crush them. The dried basil leaves are added to the bowl with tomatoes. To enrich the texture and flavor, add 50 grams of roasted almonds, 2 cloves of garlic that you will finely grate, and 100 grams of cheese, preferably a creamy type like mascarpone or a fine cottage cheese. Also add 100 grams of ricotta, which will provide a velvety consistency.
To intensify the flavors, sprinkle salt to taste and add 3-4 tablespoons of extra virgin olive oil. This will give a touch of richness and an unmistakable taste. Use a high-performance blender and blend all the ingredients until you obtain a smooth and homogeneous paste. Make sure that the entire composition is well integrated and that each ingredient leaves its mark in this delicious dish.
