Ingredients: For 1 kg of meat we need: - 500 ml dry white wine - 1 onion sliced - 1 carrot - 1 stalk of leek sliced - 1 small root celery - 2 cloves of garlic - 1 piece of clove - 5 peppercorns - 1 sprig of thyme (or 1/2 teaspoon of dried thyme) - 1 bay leaf
To prepare a delicious marinade that will transform the meat into a juicy and flavorful dish, start by preparing the vegetables. Slice the carrot into thin rounds or grate it, depending on your preference. This will add not only a pleasant texture but also a hint of sweetness that will enrich the final taste of the dish. Continue with the celery, which will provide a slightly spicy aroma, and garlic, finely chopped or crushed, will intensify the flavor, bringing an unmistakable fragrance.
After you have prepared the vegetables, take a large bowl and add the carrot, celery, and garlic. Mix them well to ensure the flavors combine perfectly. Now, it's time to add the rest of the ingredients: olive oil, balsamic vinegar, salt, pepper, and if you like, some herbs such as thyme or rosemary, which will add extra flavor. After covering the dish, place it in the refrigerator. It is ideal to let the meat marinate from evening until morning, so the flavors can deeply penetrate the meat.
