To prepare a delicious couscous salad that perfectly complements skewers and mici, we need fresh ingredients and a dash of creativity. This recipe is specially designed to satisfy the taste buds of four people, offering a perfect combination of textures and flavors.

We start by taking a large cup of couscous, about 280-300g. This ingredient will be the base of our salad, bringing a pleasant consistency and nutritional value. In a large bowl, we chop a white bell pepper into small cubes. The white pepper will add a crunchy note and vibrant color to the salad. After chopping the pepper, we place it in the bowl where we will prepare the salad.

Next, we move on to the tomatoes. If we use large tomatoes, we cut them into cubes, but if we choose cherry tomatoes, we cut them in halves or quarters, depending on our preference. These sweet and juicy tomatoes will provide an explosion of flavor in every bite. We continue with the greens, so we take a bunch of mint, which we chop finely. About half a bunch should be enough to give the salad a fresh and aromatic scent.

After preparing all the ingredients, we place them over the couscous in the bowl. It’s time to take care of the dressing. In the same cup we used to measure the couscous, we put a tablespoon of vegetable seasoning and add warm water, mixing until the seasoning is completely dissolved. It is important for the water to be warm to activate the flavors. We let the mixture cool slightly, then add two tablespoons of extra virgin olive oil and the juice of a fresh lemon. The olive oil brings a rich taste, while the lemon juice will balance the flavors with a pleasant acidity.

We pour this dressing over the ingredients in the bowl, making sure that each component is well coated. We cover the bowl with plastic wrap and let the salad chill for about an hour. This resting time will allow the flavors to blend and intensify, resulting in a truly delicious final product.

Before serving, we use a fork to fluff the couscous grains in the salad, gently mixing all the ingredients. This will ensure that each serving is full of flavor and texture. We serve the fresh salad alongside skewers and mici, creating a feast of flavors and colors. Enjoy your meal!
