Biscuit Roll with Cheese
Ingredients: 500 g biscuits, 200 g margarine (butter), 2 tablespoons peach jam, 2 tablespoons cocoa, 2 egg whites, 150 g sugar. For the cream: 300 g sweet cheese (ricotta), 100 g powdered sugar, 1 packet vanilla sugar, zest from half a lemon, 2 egg yolks, 2 tablespoons margarine (or butter) (this is optional).
To prepare a delicious roll with cheese and cocoa filling, we will start by grinding the biscuits. Choose plain biscuits, such as digestive ones, to get a crunchy and flavorful base. Using a food processor or blender, grind the biscuits until you obtain a fine powder. This will form the foundation of our roll, giving it a pleasant texture when bitten into.
In a large bowl, combine 300 grams of fresh cheese, preferably ricotta or mascarpone, with 100 grams of powdered sugar. Add the packet of vanilla sugar to enhance the flavor and the two egg yolks, which will contribute to the creaminess of the filling. Don’t forget to add the grated lemon zest, which will provide a touch of freshness. Finally, incorporate the two tablespoons of margarine or melted butter, ensuring that the mixture becomes homogeneous and creamy.
Now, let’s deal with the biscuit dough. In the bowl with the ground biscuits, add two tablespoons of cocoa, which will add a deep color and rich taste. Whip the two egg whites until stiff and gradually add them to the biscuit mixture, being careful to fold them in gently to maintain the airiness. Add 150 grams of sugar, as well as the two tablespoons of peach or apricot jam, which will enrich the flavor. Finally, pour in the melted margarine, and if the dough is too dry, add a little milk to make it easier to spread.
On a piece of cling film, spread the biscuit dough into an even sheet. Make sure it is thin enough to allow rolling without cracking. Over the biscuit dough, evenly distribute the cheese filling, being careful to leave a few centimeters at the edges to facilitate rolling. Using the film, carefully roll the dough, forming a tight roll. It is important for the roll to be compact so that it does not fall apart when cut.
After rolling the dough, wrap it well in cling film and refrigerate for a few hours, ideally overnight. This step is essential as it allows the flavors to blend and the roll to firm up. Once the resting time has expired, take the roll out of the fridge and cut it into thick slices of about one centimeter. Serve these delicious slices as a refined dessert or as a sweet snack, enjoying the savory combination of cheese and chocolate. This recipe is perfect for special occasions or simply to treat your family to something special!
