To prepare a delicious apricot jam and meringue tart, we start by ensuring we have all the necessary ingredients at hand. In a large bowl, we add soft margarine, which should be at room temperature. This is mixed well with sugar until the mixture becomes fluffy and cream-white. It is essential to mix well to ensure a fine texture of the dough. Then, we begin to gradually add the egg yolks, continuing to mix to incorporate them perfectly.
The next step is to add the four tablespoons of sour cream, which will provide a pleasant moisture to the dough, along with the lemon zest, which will bring a fresh aroma and subtle acidity. We do not forget a pinch of salt, which will balance the flavors. Finally, we begin to gradually incorporate the flour, mixing gently with a spatula until we obtain a homogeneous dough. Once the dough is ready, we wrap it in plastic wrap and let it chill for two hours. This stage is crucial as cooling helps to firm up the dough, making it easier to shape.
After the resting time has passed, we prepare the tart pans, which we lightly grease with oil to prevent sticking. We take portions of the chilled dough and roll it out, lining the sides of the pans. Inside each tart, we add a teaspoon of apricot jam, but we can use any preferred jam, such as plum or raspberry, for a more interesting variation.
To prepare the meringue, we beat the egg whites until stiff peaks form, then we begin to gradually add the sugar, continuing to mix until we obtain a glossy and stable meringue. It is important to ensure that the sugar is completely dissolved. We add the ground almonds, mixed with a tablespoon of flour, to achieve a crunchy texture and intense flavor. Using a spatula, we carefully fold the almonds into the meringue, being careful not to lose the air in the mixture.
Now, using a piping bag or a spoon, we pour the meringue over the jam in each tart, forming beautiful and appetizing peaks. We place the tarts in the preheated oven at a medium temperature, allowing them to bake until the meringue becomes golden and crispy. Once ready, we carefully remove them from the pans while they are still warm to avoid cracking.
