Apple Cake with Chocolate Syrup

To prepare this delicious apple cake with chocolate syrup, start by peeling the apples. Slice them thinly, ensuring you remove both the skin and the core with seeds. It is important to dust them with flour immediately so that they are evenly coated on all sides. This step will help the apples not to sink to the bottom of the mixture and to remain nicely distributed in the cake.

In another bowl, beat the egg yolks with 150 g of powdered sugar. The mixture should become creamy and pale, indicating that the sugar has completely dissolved. This base will give the cake a rich and soft texture. Meanwhile, it’s time to prepare the meringue from the egg whites. Whip them well until they become stiff, then gradually add the remaining sugar, continuing to whip until you achieve a glossy meringue.

Once you have both mixtures ready, begin to incorporate the meringue into the egg yolk mixture. Do this gradually, using a spatula and gentle folding motions from the bottom up, to retain the air in the meringue. This technique will ensure a fluffy and airy cake. Sift the flour together with the baking powder and add them to the mixture, continuing to mix gently.

Once the mixture is homogenized, pour it into a 30 x 40 cm baking pan that you have lined with butter and flour or with parchment paper. Arrange the apple slices on top, making sure to distribute them evenly for an attractive appearance. Preheat the oven and place the pan inside, letting the cake bake for 25-30 minutes, until it becomes golden brown and nicely baked.

After removing the pan from the oven, prepare the chocolate syrup. In a saucepan, boil some water with sugar and cocoa. Stir well to avoid lumps. Once the syrup is well homogenized, take it off the heat and add the vanilla essence, stirring again. Pour the hot syrup over the warm cake, allowing it to soak.
