Pickled Cauliflower
Ingredients: For 1 jar of 3 l: - 2 large and compact cauliflowers - coarse salt - horseradish - 2 stalks with celery leaves - 1 teaspoon heaped with peppercorns - 2-3 bay leaves - 1 teaspoon heaped with mustard seeds. The solution: - 1 l water - 100 ml 9-degree food vinegar - 1 tablespoon coarse salt.
Wash the cauliflower well under a stream of cold water, making sure to remove any impurities or hidden insects among the florets. After cleaning the cauliflower, place it in a colander to drain the excess water. Then, break the cauliflower into larger florets, being careful not to crush them, as these will be the base of the delicious pickles.
To enhance the flavor of the cauliflower, let the florets sit for an hour in a mixture of lightly salted water. The salt will help the flavors penetrate and give a more pleasant taste to the final pickle. While the cauliflower rests in the brine, prepare the jars in which you will preserve the pickles.
In each jar, place a few fresh celery leaves, which will add a distinct flavor and a touch of freshness. Add a few bay leaves, mustard seeds, and peppercorns, interspersed with sticks of cut horseradish, which will provide a spicy and refreshing taste to the pickles.
After arranging all the ingredients in the jars, drain the cauliflower from the salty water and start carefully placing it in the jars, ensuring that it is well distributed and that the flavoring ingredients are evenly interspersed.
Separately, in a pot, bring water to a boil and add salt and vinegar, mixing them well to dissolve. When the water starts to boil, carefully pour it over the cauliflower in the jars, making sure each floret is completely covered. This process will help preserve the cauliflower and develop the flavors.
After filling the jars, seal them tightly and place them in a warm, dry place to allow the pickles to cool gradually. Let them sit in a dry steam for a few days to mature. Once the jars have completely cooled, store them in a cool, dark place where the flavors will continue to develop. These cauliflower pickles are perfect for adding a crunchy and tangy note to your winter meals, making a great side dish for various dishes. Enjoy!
