Jarred vegetable stew
Ingredients: Necessary for 1 serving: 1 liter of oil, 3 kg of onions, 2 kg of bell peppers, 1 kg of carrots, 5 kg of tomatoes, 1 kg of raw green beans, 2 large eggplants, 1 large bunch of celery leaves, 1 large bunch of parsley leaves, optional hot peppers 2 pcs, salt to taste.
To prepare this delicious recipe, we start by choosing fresh ingredients, essential to achieve a worthy result. In a large pot, we add 1 liter of oil, preferably sunflower or olive oil, which will provide a flavorful base for the dish. Meanwhile, we take care of the onion: 3 kg of sliced onion will add natural sweetness to the dish. We sauté the onion over medium heat, stirring occasionally to prevent it from burning. After a few minutes, when the onion becomes translucent and starts to caramelize, we add 2 kg of cut bell peppers in larger pieces, which will add a note of freshness and a vibrant taste.
Once the peppers have softened slightly, it’s time to introduce 1 kg of thinly sliced carrots, which will add a sweet flavor, perfect for this mix. We let everything sauté until the carrots become slightly tender, about 10-15 minutes. Once the carrots are halfway cooked, we add 5 kg of peeled and diced tomatoes. The tomatoes will not only bring a pleasant acidity but will also provide a delicious liquid for the dish.
As the tomatoes start to boil, we add 1 kg of raw beans, which will contribute a hearty texture and protein. It is important to ensure that the beans are well washed, and our recipe will benefit from adequate cooking time. Towards the end, we add 2 large eggplants, diced, which will bring a special creaminess to our dish. They will soften and perfectly complement the other ingredients.
For an extra flavor boost, it’s time to add fresh celery and parsley leaves, and if you want a spicier taste, feel free to add chili peppers to your liking. We season with salt and pepper to taste. Finally, to preserve this delight, we add 1 large tablespoon of salicylic acid or 1 packet of preserving powder, essential for keeping the dish for winter.
After mixing everything well, we transfer the mixture into sterilized jars, making sure to leave a little space at the top. We seal the jars tightly and wrap them in a thick blanket, letting them sit until the next day. This preservation method will allow the flavors to blend and develop, giving you a delicious dish that you will enjoy on cold winter days.
