Aromatic Peppers in Oil

 Ingredients: * 4 large bell peppers * 1 1/2 liters of vinegar * 3 tablespoons of capers (from vinegar or salt) * a few cloves of garlic * 8-10 fillets of anchovies (in salt or oil) * chopped parsley * fresh oregano (optional) * olive oil (sunflower oil) * 1 heaping tablespoon of salt

We wash the peppers with cold water, making sure to remove any impurities that may be on their surface. After cleaning them well, we cut them in half, removing the seeds and the white filament inside, which can give a bitter taste to the dish. Then, we cut the peppers into strips of suitable sizes, depending on our preferences. It is good to think about how we will serve the peppers, so we can make the strips larger for a rustic look or thinner for an elegant presentation.

While we are dealing with the peppers, we take some fresh parsley, which we chop finely, so that its flavor blends perfectly with the other ingredients. Garlic, another staple ingredient in this recipe, must be cut in half to release the essential oils and give an intense flavor to our dish.

In a large pot, we add an appropriate amount of vinegar and salt, mixing well to ensure that the salt dissolves completely. When the mixture starts to boil, we carefully add the strips of peppers. The boiling time is crucial: for fleshy peppers, 10 minutes is enough, but for the more delicate ones, we can reduce the boiling time. It is important to maintain the texture of the peppers so that they do not become too soft.

After the boiling time has expired, we remove the peppers from the pot and place them on a clean kitchen towel to drain well, turning them on all sides. During this time, we take care of the jars in which we will preserve them. We sterilize them by placing them in boiling water for 10 minutes, ensuring that they are completely clean and ready to receive our delicacy.

When the peppers are completely drained, we can carefully place them in the jar. To remove excess liquid, it is recommended to gently press them on a paper towel. We start placing a layer of peppers, followed by chopped parsley, a few capers, and pieces of anchovies, and for an extra flavor, we add a few pieces of garlic. We continue to alternate layers of peppers with the other ingredients, gently pressing each layer to ensure that the jar is well packed.

Once the jar is full, we carefully pour olive oil on top, ensuring that all the ingredients are completely covered. We seal the jar tightly and, to ensure that the peppers remain well preserved, we check the next day if more oil needs to be added. Thus, the peppers will be perfectly preserved and ready to be enjoyed in our favorite dishes or as a delicious, flavorful snack.
