Black Currant Jelly
Ingredients: -1 l blackcurrant juice -1 kg sugar
To prepare a delicious currant jam, first make sure you have all the necessary ingredients and the right utensils at hand. Start by carefully washing the currants, removing any impurities. It is important to dry them well after washing, as excess water can affect the final consistency of the jam. Once you are done, pass the currants through a tomato juicer or a fruit press to obtain a rich and aromatic juice.
Transfer the obtained juice into a large pot and place it over medium heat. Boil the juice until it starts to thicken, stirring occasionally to prevent it from sticking to the bottom of the pot. This step is essential, as concentrating the juice will intensify the flavor of the jam. Once the juice has started to achieve a thicker consistency, gradually add the sugar. Stir constantly to ensure the sugar melts evenly. It is important not to rush this process, as the sugar will dissolve better if you give it time.
Continue boiling the mixture, checking its consistency periodically. An effective way to test it is to take a spoonful of the jam and let it drip. If droplets form that stick together, then the jam is ready. When you reach the desired consistency, remove the pot from the heat.
Prepare the jars: wash them well, then dry them and heat them in the oven to prevent them from cracking when in contact with the hot jam. When the jam is ready, carefully pour it into the jars, making sure no air bubbles remain. Seal the jars immediately to lock in the flavor.
For a slow cooling, it is ideal to place the jars upside down, with the lid down, between blankets or in a thick blanket. This will help maintain a constant temperature and allow the jam to stabilize properly. Once completely cooled, you can store the jars in a cool, dark place. This way, you can enjoy delicious currant jam throughout the year, perfect for spreading on toast, in cakes, or simply as a topping for your favorite yogurt.
