To prepare a delicious garlic preserve with hot peppers and aromatic herbs, we will start by gathering all the necessary ingredients. You will need a few cloves of garlic, fresh hot peppers, some sprigs of rosemary, thyme, and bay leaves, as well as vinegar and sugar to create a savory mixture. Preparing this recipe is not only enjoyable but also a true art that will delight your senses.
Start by boiling a pot of water and adding a teaspoon of salt. Once the water begins to boil, add the garlic cloves, which should be peeled and left whole. Boil them for about 5 minutes. This step helps to soften the garlic and reduce its intensity, giving it a milder taste. After boiling, carefully drain them and let them cool.
Once the garlic cloves are cooled, prepare three clean, sterilized, and dry bottles. Distribute the garlic cloves among the three bottles, ensuring that each bottle has a generous portion. In two of these bottles, add 3 fresh hot peppers each, cut at the ends to allow the flavors to infuse. In one of the bottles with peppers, add a few bay leaves, and in the other, place sprigs of fresh rosemary. In the third bottle, which contains only garlic, add a few sprigs of thyme, which will provide a note of freshness and a unique aromatic flavor.
Now, let's move on to preparing the preserving liquid. In a separate pot, bring the vinegar diluted with 250 ml of water to a boil, in which you have also added the sugar. Stir well until the sugar completely dissolves in the liquid. Once the mixture has reached boiling point, carefully and hotly pour it over the garlic cloves and peppers in the bottles, ensuring that all ingredients are well covered.
For the bottle with garlic and thyme, pour olive oil on top, making sure to fill the bottle almost to the brim. This will create a barrier that will help preserve the fresh flavors and provide a rich taste. After filling all the bottles, seal them tightly with caps.
The last step is essential: place the bottles with vinegar in a cool, shaded place where they can cool completely. It is recommended to let them sit in a dry place for a few hours so that the flavors can blend perfectly. Once they have cooled, store them in a dark place where you can enjoy them throughout the winter or give them as gifts to loved ones.
