Mushroom Spread
Ingredients: 6 kg porcini mushrooms 1 kg carrots 1 kg white onion 3 kg bell pepper 2 kg sweet pepper 1.5 liters of oil coarse non-iodized salt whole pepper 1 liter of tomato paste
To prepare a delicious vegetable preserve with mushrooms, we will start by ensuring we have all the necessary ingredients and that we are ready for a pleasant and engaging culinary process. The first step is to take care of the mushrooms. Choose fresh mushrooms, preferably porcini or other flavorful mushrooms, which you should wash well under cold running water to remove any impurities. After cleaning them, boil them in salted water for about 10-15 minutes until they become tender.
While the mushrooms are boiling, prepare the bell peppers and the sweet peppers. They need to be roasted on a hot plate, which will give them an intense flavor and a special aroma. Once they are well roasted, peel off the skin and cut them into smaller pieces for easier processing.
Next, we continue with the onion and carrot. Peel the onion and carrot, then boil them together in salted water until they become soft. Once all the ingredients are prepared, pass them through a meat grinder to obtain a homogeneous mixture that will form the base of our delicious preserve.
In a large pot, pour in 1 liter of oil, then add the chopped onion, carrot, bell peppers, and roasted peppers, as well as the boiled mushrooms. Mix the ingredients well and let them simmer over medium heat, stirring occasionally to prevent sticking to the bottom of the pot. When the mixture is almost cooked, add the remaining oil and tomato paste, continuing to simmer for another 10 minutes.
After obtaining a well-cooked mixture, add salt and peppercorns to taste. It is important to taste it to adjust the seasoning according to your preferences. When everything is ready, prepare the jars. Make sure they are very clean, preferably sterilized, to prevent any risk of contamination. Fill the jars with the hot mixture, then seal them and place them in a sterilizer, letting them steam for about 40 minutes.
After sterilization, let the jars cool in water, then carefully remove them. Wipe each jar with a clean towel and label them with the date and contents. Thus, you will have a delicious vegetable preserve with mushrooms, perfect for winter, which will add a touch of flavor to your dishes. This recipe is not only an excellent way to preserve fresh vegetables but also an opportunity to enjoy the rich flavors of summer throughout the winter.
