Chocolate cake
Ingredients: Base: 6 eggs, 6 tablespoons sugar, 5 tablespoons flour, 1 tablespoon cocoa, vanilla essence. Cream 1: 200g white chocolate, 200ml liquid cream, vanilla essence. Cream 2: 200g dark chocolate, 200g liquid cream, rum essence. Syrup: 250g sugar, 250ml water, rum essence. Glaze: 200g chocolate, 100g liquid cream, 50g butter. Decoration: roses.
To prepare a delicious cocoa cake, we start with a fluffy base that will serve as the foundation of this refined dessert. The ingredients needed for the base are: wheat flour, cocoa powder, sugar, eggs, oil, and baking powder. All the dry ingredients are mixed together, and then the wet ingredients are added. Everything is mixed until a homogeneous composition is obtained, which is poured into a baking tray lined with parchment paper. It is baked in a preheated oven at 180 degrees Celsius for about 30-35 minutes. After passing the toothpick test, it is left to cool on a rack.
In the meantime, we prepare the delicious creams that will add extra flavor to our cake. The first cream is made from dark chocolate and whipped cream. The chocolate is broken into small pieces and mixed with the cream, then put on low heat, stirring continuously until the chocolate is completely melted. It is taken off the heat and left to cool for an hour and a half, after which it is whipped with a mixer at high speed, obtaining an airy and fine cream. Finally, a few drops of vanilla or rum essence are added to enhance the aroma.
For the syrup, water is boiled with sugar to obtain a sweet syrup, which is left to cool. After cooling, rum essence is added for an extra touch of refinement. Now, when all the components are ready, we cut the cocoa base into three equal layers. The first layer is generously soaked with the rum syrup, followed by the white cream, smoothing it evenly. The second layer is placed, which is also soaked, followed by the second cream. Finally, the last layer is added, which is carefully soaked. The cake is covered with a thin layer of cream all over the surface and left to chill for a few hours so that the flavors blend perfectly.
For the glaze, chocolate, cream, and butter are combined, melting them over low heat, mixing until a consistent and glossy composition is obtained. This glaze is carefully poured over the cooled cake, covering it evenly. Before the glaze hardens, the cake can be decorated with various shapes made from milk powder and honey, as I did, to give it an elegant and appetizing appearance. The final result is a cake weighing approximately 1.5 kg, perfect for being enjoyed with loved ones on a special occasion.
