Carp Platter

 Ingredients: 3 or 4 pieces of carp belly, 2-3 tomatoes, 1 green bell pepper, 1 red capia pepper, 20 ml olive oil, coarse salt, whole peppercorns, 2 bay leaves, 4-5 dried onions, 1 glass of dry or semi-dry white wine, 3-4 slices of lemon, fresh parsley, 2-3 whole garlic cloves, 100 ml (2 small cups) of water.

To prepare a delicious meal with carp, it is essential to pay close attention to every detail of the recipe. We start by washing the carp well with cold water, ensuring that all impurities are removed. Then, we scale the carp, an important step to achieve a fine texture. After cleaning the carp, we cut it into suitable pieces, making sure to keep the belly pieces, which are very flavorful.

To intensify the flavors, we sprinkle a pinch of coarse salt over the carp's belly and let it marinate in the refrigerator, covered with foil, for 30 minutes. This step will help the salt penetrate and enhance the meat's flavor. After this time, we will wash the fish pieces under cold running water to remove the excess salt.

Next, we take care of the vegetables. We peel the onion and cut it into thin slices. This ingredient will add sweetness and flavor to our dish. We place the onion slices in a heat-resistant dish or a baking tray, making sure to cover the bottom of the dish completely. We drizzle the onion with olive oil, which will help caramelize it and add a rich taste.

On top of the onion, we carefully place the carp pieces, and on top of them, we add a few slices of lemon, which will provide a note of freshness and acidity. We continue with a layer of bell pepper and capia pepper slices, which will not only color the dish but also give it a pleasant aroma. Next is a layer of tomato slices, which will add juiciness and a delicious taste. We must not forget to add two bay leaves, which will infuse the dish with a subtle aroma.

To complete the flavor, we add a few whole peppercorns or sprinkle ground pepper, according to preference. Now, our dish is ready for the oven. We place it in the preheated oven at 200 degrees Celsius and let it cook for 50 minutes.

After this interval, we take the tray out of the oven and add two finely chopped garlic cloves, a glass of white wine, which will release the flavors of the ingredients, and a little chopped fresh parsley. These ingredients will further enrich the taste of our dish. We leave everything in the oven for another 10 minutes to allow the wine to evaporate and the flavors to combine perfectly. In the end, we will have a delicious, tender, and aromatic baked carp, perfect to be served alongside mashed potatoes or a fresh salad. Enjoy your meal!
