To prepare a delicious cookie recipe, we start by gathering all the necessary ingredients. The first step is to measure approximately 500 grams of good quality flour, which we will mix with 200 grams of lard. This combination will give our dough texture and a rich flavor. Using a mixer or simply with our hands, we mix the two ingredients well until a homogeneous composition is formed, similar to wet sand.

After this, we add four fresh eggs, a teaspoon of salt, 150 grams of sugar, 1 packet of vanilla sugar that will provide an enticing aroma, and the grated zest of a lemon for a touch of freshness. It is also essential to insert a teaspoon of baking powder, which will help the cookies rise during baking. We mix all the ingredients very well, ensuring that the dough becomes firmer but easy to shape.

Once we have obtained the dough, we divide it into three equal pieces. Each piece is rolled out on a surface sprinkled with a little flour, making sure to maintain an even thickness of about 5 mm. Using glasses of different sizes, we cut circles from each sheet of dough. Thus, we will obtain three sizes of circles: large, medium, and small, which will create a pleasant visual effect in the end.

To add a touch of shine and help the layers stick together, we beat an egg white with a fork. Using our finger, we apply a bit of egg white to the center of each cut disc. Then, we place the medium-sized dough circle over the large discs, repeating the operation with the egg white, and finally, we place the small circle on top.

To give a decorative look, we cut the edges of each disc into four, being careful not to cut all the way through, but just to create a nice pattern. After gently pressing the center of each cookie, we prepare to bake them. We carefully place them in a pan with hot oil, making sure not to overcrowd them.

Once the cookies have taken on a golden hue, we remove them with a spatula and let them drain on an absorbent napkin. Finally, we can decorate them with caramelized sugar, powdered sugar, or even both, to add a touch of sweetness. These cookies are perfect for any occasion, being not only delicious but also very attractive.
