To prepare a culinary delight that will impress any cake lover, we will start with a fluffy base made from 8 whipped egg whites. These should be beaten until they become firm and shiny, then gradually add 200g of sugar, continuing to beat until the sugar completely dissolves and the mixture becomes a dense foam. Gently, we will fold in 50g of coconut and 100g of poppy seeds, adding finally 4 tablespoons of flour and a pinch of baking powder extinguished in lemon juice. It is essential to mix everything carefully, using a spatula to avoid losing the air from the egg whites. The obtained mixture is poured into a greased and lined tray or, alternatively, into a tray lined with baking paper, making sure it is evenly distributed.
The oven should be well heated to 195 degrees Celsius, and the base will be baked for 15-20 minutes. A 40 x 25 cm tray is ideal for this recipe. While the base is baking, we can take care of the delicious cream that will complement our cake. In a bowl, 8 egg yolks will be well beaten with 8 tablespoons of sugar until the mixture becomes creamy and light in color. Then, add 300ml of milk and a packet of vanilla pudding or, alternatively, 3-4 tablespoons of starch. This mixture is cooked over low heat, stirring continuously to avoid lumps, until it thickens, having a consistency similar to mayonnaise.
Once the cream has cooled, gradually incorporate 300g of fatty butter, with a fat content of 80%, mixing well until homogeneous. At this point, I chose to divide the cream into two parts: in the first half, I added 2 tablespoons of cocoa, resulting in two different cakes, each with a unique taste. The cream is spread evenly over the cooled base, creating a delicious base for the biscuits. The biscuits are placed side by side, and for an extra flavor, the chocolate is melted with 50-80 ml of cream and a cube of butter over low heat, then spread over the biscuits while still warm.
After the cake is assembled, it is ideal to let it chill in the fridge for at least 3 hours to set and allow the flavors to blend harmoniously. Even if we only waited for 2 hours, the cake was delicious and cut very well. Surely, this dessert will bring a smile to the faces of loved ones, and every bite will be an explosion of flavors. Enjoy your meal!
