Bags with Chestnuts

To prepare this delicious recipe, we will start with the chestnut puree, which will be the base of our rich flavor. It is important to ensure that the puree is more 'chocolatey' than the store-bought one, so we will add rum essence, cocoa, and sugar to it. These ingredients will transform the puree, giving it a creamy texture and an intense flavor, perfect for filling the pancakes. If you opt for store-bought puree, don't worry! Prepare a syrup from sugar and water, which you will slightly thicken, then add cocoa and rum essence. Mix well to obtain a smooth syrup that you will add over the chestnut puree, making sure it combines perfectly.
For the pancakes, follow the usual recipe: mix eggs, flour, milk, and a pinch of salt to obtain a fine batter. Let the batter rest for 15-20 minutes to achieve fluffy pancakes. Heat a non-stick pan, grease it with a little oil, and pour a ladle of batter, swirling the pan to distribute it evenly. Cook the pancakes on each side for 1-2 minutes or until golden. Repeat the process until you finish all the batter.
Now that we have the pancakes and puree, it's time to fill them. Take a pancake and add a generous amount of chestnut puree in the center.
