Moroccan Meatballs
Ingredients: 150-200 g of rice, 500 g of minced meat (lamb, mix), salt, pepper, 1 teaspoon of cinnamon, 1 teaspoon of sweet paprika, 1 teaspoon of ground coriander, butter or oil, 2 onions, 1 clove of garlic, 3 stalks of green celery, saffron, 1500ml of chicken broth, juice of one lemon, 1 bunch of fresh parsley.
To prepare this delicious recipe, we start by choosing quality meat, preferably lamb or chicken, which will give the meatballs a rich flavor. In a large bowl, we combine the minced meat with well-washed rice, ensuring that the rice is in balanced proportions to achieve a perfect texture. We add salt to taste, followed by a sprinkle of cinnamon, which will bring a warm and aromatic note. Paprika will give a slightly smoky flavor and a vibrant color, while finely chopped fresh coriander will add an irresistible freshness.
After mixing the ingredients well, we form evenly sized meatballs, which we fry in a pan with butter or oil, being careful to turn them to brown evenly on all sides. In the meantime, we prepare the vegetables: we slice the onion thinly and chop the celery into small pieces, which we add to the pan after the meatballs are nicely browned. These vegetables will add extra flavor and texture to the dish.
Saffron, a precious ingredient, will be infused in the hot chicken broth, adding a golden color and a distinct aroma. We pour the chicken broth over the meatballs and vegetables, covering the pan to let everything simmer for about 40 minutes. It is important to stir gently from time to time to ensure that all the ingredients combine perfectly. If we notice that the liquid decreases too much, we can add a little water or extra broth.
After the cooking time has expired, we turn our attention to finishing the dish. We add freshly squeezed lemon juice to bring a pleasant contrast to the rich flavors and sprinkle with freshly chopped parsley, which will add a note of freshness. We let the dish sit covered for a few minutes to allow the flavors to meld.
To serve, alongside the aromatic meatballs, we can prepare various steamed or sautéed vegetables, which will perfectly complement this main course. Additionally, a serving of semolina will provide a pleasant texture and absorb the delicious sauce. This recipe is not only nutritious but also full of flavors that will delight the taste buds.
