Now, let's focus on the cream. In another bowl, we will beat the egg yolks with the 150 grams of sugar, mixing vigorously until the yolks become lighter in color and the texture becomes airy. It is essential to achieve a homogeneous and fluffy composition. In another container, we beat the egg whites until we obtain a firm foam that holds its shape. This foam will add a light texture to our cream.
Now, we combine the two mixtures: the beaten egg yolks and the egg white foam. Carefully, we integrate the mascarpone, an ingredient that will bring extra creaminess and richness. Meanwhile, we prepare a packet of gelatin according to the instructions on the package, then add it to the mascarpone cream, mixing well to ensure it distributes evenly.
Once the cream is ready, we return to layering the dessert. Over the first layer of ladyfingers, we pour half of the prepared cream, spreading it evenly with a spatula. Then, we repeat the process, placing a new layer of ladyfingers, which we fill with the remaining cream. It is important to ensure that each ladyfinger is well covered with the delicious cream.
