Appetizer Roll
Ingredients: Batter: -5 eggs -3 tablespoons flour -300 ml milk -1 pinch of salt Filling: -100 g butter -200 g liver pâté -1 tablespoon mustard -1 red pepper -1 bunch green parsley -1 onion -3- 4 boiled eggs - bacon - salt - pepper
We start this delicious recipe with an essential step: boiling the milk. Take a medium-sized pot and pour in the milk, adding a pinch of salt to enhance its flavor. Place the pot over medium heat and let the milk come to a boil, being careful not to let it burn. In the meantime, prepare a paste from flour and a little cold milk, mixing well until you achieve a smooth consistency. This step is crucial as it will help thicken the mixture.
Once the milk starts to boil, carefully pour in the flour mixture dissolved in milk, stirring continuously to prevent lumps from forming. Continue to cook the mixture over low heat, stirring constantly, until it begins to thicken. It is important to maintain moderate heat to achieve a fine texture. After it reaches the desired consistency, remove the pot from the heat and let the mixture cool slightly.
When the mixture has cooled, add the egg yolks one by one, mixing well after each addition to ensure even integration. After incorporating all the yolks, beat the egg whites separately until they form stiff peaks. Gently fold the beaten egg whites into the milk, flour, and yolk mixture using a spatula, taking care not to lose the air from the egg whites.
Prepare a baking tray by lining it with parchment paper and pour the mixture evenly into this tray. Preheat the oven to a medium temperature and place the tray inside, allowing it to bake until the surface becomes golden and fluffy. When ready, remove the tray from the oven and carefully invert the cake onto a damp towel, rolling it with the help of the towel to form a roll. Let it cool.
In the meantime, let’s prepare the filling. In a bowl, cream the butter with the pâté and mustard until you get a creamy paste. Add the finely chopped bell pepper, ham, and boiled eggs, diced. Include the parsley and finely chopped onion, mixing all the ingredients well. Don’t forget to season the filling with salt and pepper to taste.
When the cake has completely cooled, spread the filling evenly over its surface. Carefully roll the cake, making sure to tighten it well, then wrap it in plastic wrap and let it chill in the refrigerator for a few hours.
