To prepare a delicious tart with onion, bacon, and cheese filling, start by combining flour with a pinch of salt in a large bowl. This essential step will ensure that your dough has a balanced taste. Gradually add the cold diced butter, mixing with your fingers until you achieve a sandy texture. This will help create a flaky crust. Then, add the beaten egg and milk, continuing to knead the dough quickly until it becomes smooth. Form a ball from the dough, wrap it in plastic wrap, and let it rest in the refrigerator for about 30 minutes to firm up a bit.
While the dough cools, move on to the filling. Heat a little oil in a pan and add the finely chopped onion. Sauté the onion until it becomes golden and translucent, then add the sliced bacon. Cook until the bacon is crispy and all the flavors meld with the onion. Season the mixture to taste and let it cool slightly so it doesn't affect the dough.
Once the dough has cooled, roll it out on a floured surface to obtain a thin sheet. Line a 26 cm tart pan that has been greased with butter and dusted with flour. Fit the dough into the edges of the pan, making sure it is evenly distributed. Use a fork to prick the bottom of the dough in a few places, which will help prevent puffing during baking. Sprinkle breadcrumbs on the bottom of the tart to absorb excess moisture.
On this layer of breadcrumbs, add a generous layer of grated cheese, followed by the onion and bacon mixture. This will provide a rich and delicious flavor. In a separate bowl, beat the eggs with cream, adding your favorite spices, such as nutmeg, which will add extra flavor. Don’t forget to salt and pepper the mixture to taste. Pour the egg and cream mixture evenly over the tart filling. Preheat the oven to 200 degrees Celsius and place the tart in the well-heated oven.
