Hot Appetizers
To prepare a delicious recipe for appetizers with chicken, vegetables, and goat cheese, it is important to follow the steps carefully so that the result is pleasing to everyone. We start by preparing the chicken: the boneless chicken breast is boiled until it becomes tender and tasty, then it is chopped finely, ready to be included in our mixture.
In a pot, we add water and a little salt, then we put the frozen vegetable mix. This should be boiled for a few minutes until it becomes soft but not overcooked. After the water reaches boiling temperature again, we strain the vegetables using a sieve, allowing them to drain well, then transfer them to a large bowl, preparing them for the next step.
In a frying pan, we sauté the onion in 3-4 tablespoons of sunflower oil until it becomes translucent and slightly golden. We then add the previously prepared chicken, stirring gently with a wooden spoon so that the flavors combine. After the chicken has heated up, we add the boiled vegetables, mixing all the ingredients well. It is important to season the mixture with salt, pepper, and garlic to taste, considering that the vegetables and chicken have already been boiled.
Once the mixture is well homogenized, we transfer it to a large bowl. We grate the goat cheese and add it to the mixture, stirring carefully. The cheese will add a salty and creamy flavor to our dish. Separately, the egg whites and yolks are beaten with a whisk in a small bowl, then added to the mixture of vegetables, meat, and cheese, along with the sour cream, everything being homogenized again.
To continue, we preheat the oven and grease the molds with butter, then dust them with flour to prevent sticking. The obtained mixture is evenly divided into the prepared molds. We grate the cheese and sprinkle it on top, adding an extra touch of flavor. It is good to use dill for an extra aroma, sprinkling it on top as well.
After placing the molds in the baking tray, we place them in the preheated oven, on the middle rack, at moderate heat. The baking time is about 25-30 minutes until the surface of the baskets becomes golden and crispy, a sign that they are ready. When the baking time is over, we take the molds out of the oven and let them cool slightly before removing them from the molds. These appetizers are perfect to be served warm, alongside loved ones, offering a combination of textures and flavors that will delight any table.
