Apple Pie - Lent
Ingredients: 400 g flour (+75 g approx. for dusting the work surface, rolling pin, or if the dough is too soft and sticky) 200 g margarine 7 tablespoons of water 1 tablespoon of vinegar some crushed biscuits or semolina 4 apples diced 2-3 tablespoons of sugar cinnamon, raisins, chopped walnuts (I was missing all of these this time)
To prepare a delicious apple pie, you need a little patience and simple yet quality ingredients. We start by making the dough, which is the base of the recipe. In a large bowl, mix the dry ingredients, such as flour and a pinch of salt. Then, add the cold butter cut into cubes and rub it with your fingertips until the mixture resembles bread crumbs. Now, gradually add cold water, mixing until you get a soft dough. It is important not to knead too much to avoid a tough dough. Once the dough is ready, wrap it in plastic wrap and let it chill in the refrigerator for 30 minutes. This step will allow the gluten to relax, making the dough easier to roll out.
After you have chilled the dough, take it out and cut it into two equal pieces. From the first piece, roll out a sheet using a rolling pin, making sure it is large enough to cover the pan (for example, a 26x26 cm square pan). You may need a little flour on the work surface and on the rolling pin to prevent the dough from sticking. In my case, I used about 75 grams of extra flour. Once you have rolled out the sheet, feel free to trim the corners, especially if you are not very skilled at getting a perfect shape.
We continue with the filling. Sprinkle some crushed cookies on the dough sheet, which will add texture and a pleasant taste. Then, peel the apples and cut them into small pieces. If you prefer, you can grate them or sauté them a little beforehand, but I like them fresh, directly in the pie. Evenly distribute the apple pieces over the cookies, making sure to cover the entire surface.
Cover the filling with the second sheet of dough, which you rolled out from the remaining dough. With a fork, make a few holes on the surface of the pie; this will allow steam to escape during baking. Preheat the oven to a low temperature, preparing for a long baking time. Leave the pie in the oven until it becomes golden and appetizing, and the aroma of apples and cookies will spread throughout the house. This apple pie will surely become a favorite dessert, perfect to be served alongside a scoop of ice cream or a dollop of cream. Enjoy every slice!
