Macaroni with Semolina

 Ingredients: 1/2 package of macaroni (pasta) 2 cups of 50 ml with semolina 2 cups of 50 ml of water (the cups used to measure the semolina) sugar salt 50 ml oil

To prepare a delicious and comforting dish, we start by cooking the pasta. In a large pot, we bring water to a boil with a generous tablespoon of salt. The water should boil well, and when large bubbles start to appear, we can add the macaroni. It is important to follow the instructions on the package to achieve the perfect texture, and in our case, we let the pasta boil for about 8 minutes. It should be al dente, so it retains a slight firmness.

While the pasta is boiling, we take care of the semolina. We take a deep pan and add 50 ml of sunflower or olive oil, depending on preference. We heat the oil over medium heat, and when it gets hot, we carefully pour in the two cups of semolina. Frying the semolina is an essential step, as it will give it a rich flavor and a golden color. We continuously stir, so the semolina fries evenly, avoiding burning.

After the semolina has taken on a pleasant hue and started to release enticing aromas, we gradually add the two cups of water. At first, it is normal for the mixture to seem like it is clumping together. Don't worry! We continue to stir with a wooden spatula, and when the water starts to boil, the semolina will unfold, and the mixture will become homogeneous. We add a good pinch of salt to enhance the flavor, making sure to adjust according to personal preferences.

When the semolina is fully cooked and has a pleasant consistency, it is time to add the cooked pasta. We drain it well and carefully incorporate it into the pan, gently stirring to avoid crushing it. We ensure an even distribution of the semolina around the pasta, so each piece is well coated.

Once everything is well mixed, we can serve the dish on plates. It is a moment of celebration, and to give it an extra flavor, we sprinkle sugar on top. This combination of the neutral taste of semolina, the texture of the pasta, and the sweetness of the sugar creates a comforting dish, perfect for cool days or for moments when we want something simple yet tasty.
