Pasta with Cottage Cheese

Ingredients: pasta or spaghetti or any other pasta - cottage cheese - bacon - sour cream - oil - salt

To prepare a delicious pasta dish, we start by boiling water in a large pot, adding 1-2 tablespoons of oil and a similar amount of salt. This not only helps to flavor the pasta but also to maintain its texture. Once the water reaches a boiling point, we reduce the heat to medium and add the spaghetti. It is essential to stir occasionally to prevent the pasta from sticking together.

After about 8-10 minutes, when the spaghetti reaches an al dente consistency, it's time to let it rest for 5 minutes with the heat off, to absorb its flavors. Then, we carefully drain it, ensuring that it does not remain in water, as this could make it sticky.

Meanwhile, we start preparing the sauce. In another pot, we put pieces of bacon on low heat. We let the bacon cook slowly until it becomes crispy and releases its fat, achieving a texture similar to cracklings. For those who prefer alternatives, the bacon can be cut into large, scored pieces that can later be removed from the pot. A healthy option would be to use a few slices of sausages or homemade eco ham, cut into small pieces and sautéed in oil, to add a note of flavor to the dish.

Once the bacon is ready, we add the pasta to the pot with the bacon, stirring gently to integrate its flavor perfectly. Then, we add cottage cheese, which will add a rich creaminess and delicious flavor. Let’s not forget about salt, which we add to taste, to enhance all the flavors. We mix the ingredients well, ensuring that the pasta is evenly coated with our savory sauce.

The dish is now ready to serve! You can add cream on top to provide an extra note of creaminess that will enrich every bite. This simple yet flavorful recipe will surely be appreciated by all your loved ones. Enjoy your meal!
